Welcome Anne new creation to FTF. First, GOOD FOR YOU on not using fish to cycle with. I have a better idea. Go to Ace Hardware and get a cheap bottle of pure ammonia. Make sure it is pure with no surfactants..if it suds up when you shake it put it back. It has to be pure. Then follow the directions in our cycling videos. I have used this method many times successfully. With all the live rock, etc it should not take very long and you are doing this the best possible way!
As far as the skimmer goes I think I would not run it and let nature take its course. The process takes a while so I doubt that the ammonia has "spiked". What are your Nitrite readings? After all has been cycled I see no reason why you can't have corals. what you keep of course depends upon lighting and flow requirements.
