Answering your tank condition problem is going to take more background info than we currently have on your tank.
We need to know the individual levels are that the LFS is telling you are ok. The ones we need in particular are: Ammonia, Nitrite, Nitrate, pH, KH, salinity/specific gravity, temp, tank volume, tank age, water change frequency, and feeding habits.
If you can answer those then we can have a better idea of what is going on in the tank chemically.
Doing regular weekly 10% water changes are the safest, easiest, most reliable method of keeping your tank healthy. They will not do the job totally, but they will help the most of all.
