I usually do the same. About 20-30% water changes every week, and I also use ceramic rings and never change them.
I just wasn't sure when I could start maintenance because of the cycling.

Here's my update:
This is about day 11 since I added fish so I am hoping I am one of the lucky ones whose tank cycled with no lost fish, but I have had another change in water parameters and I am concerned.
Right now ammonia remained "0"
Nitrates went up from 5 to about 8, which is fine with me, but my nitrites have risen from 1 to 2.
That worries me. Does it sit OK with you?
