Hey ryshark! Sorry to hear about your butterfly - hopefully this isn't tooo much of a problem.
What are you feeding your fish?
Are there any other symptoms or signs that you can notice?
I know that these fish are pretty much going to eat any tube worms and even some corals so that isn't odd to hear of yours doing the same. How long was the live rock out of water before you put it in your tank?
I know that there are some parasitic worms in the saltwater world that can become a problem, but a lot of times not feeding the right diet could cause issues like this one....just like ffffrf is hinting at. I will be honest and say that I haven't heard all that much about feeding peas to saltwater fish - but then again, I haven't really experienced a lot of saltwater ailments other than ich - but I have heard a lot of good things about the Ocean Nutrition brand of frozen foods like Formula 1 and 2....and I think they have one formula that is tailored for butterflyfish that contains some sponges and such as well. In the past, I have fed formula two with garlic to a cichlid that I thought had an internal parasite and I really think it did help.
I don't know how long you have had this fish, but if it is a newer purchase, perhaps the problem actually started with what the store or distributor was feeding it....so even if you are providing the right diet now, it might just take some time for that to iron itself out.

I added 9 lbs of live rock 2-hours before I saw the fish taking a stringy poop.

IMHO, you can save yourself a lot of money, and potentially a lot of heartache by adding base rock to an established tank versus actual live rock. As you point out, you can't be sure what has died throughout the process of transporting the live rock between tanks and in fact, you can carry ich and other problematic hitchhikers on live rock that you would not find on base rock becuase it is not in water (pretty smart...aren't I? I actually designed this road sign last week as well:
